Tahini Almond Date Bites

Ingredients

  • 6 Medjool dates (½ cup)
  • 1 cup raw almonds
  • 2 tablespoons tahini
  • pinch sea salt
  • 3 tablespoons sesame seeds to coat
  • water by the tablespoon if needed

Instructions

  1. Remove pits from dates. Soak dates in hot water for 10 minutes to soften, then drain.
  2. Add sesame seeds to a shallow bowl or plate and set aside for rolling.
  3. Add almonds to the bowl of a food processor and pulse until crumbly.
  4. Add softened dates, tahini, and salt to the food processor. Blend until combined with the almond crumbs.
  5. Test the dough by squeezing a small amount between your fingers; it should hold together. If it’s crumbly, add water 1 tablespoon at a time or a little extra tahini until it forms a cohesive dough.
  6. Roll the dough into 1-inch balls using slightly wet hands to prevent sticking.
