Who knew?

Sloppy Joes began as loose-meat sandwiches in the Midwest. The original version is often traced back to the 1930s and a cook named Joe who worked in a café in Sioux City, Iowa.

The sandwich goes by different names across the region—Maid-Rite or Tavern in parts of Iowa, and slushburger or spoonburger in areas of the upper Midwest and Dakotas.

The beauty of homemade Sloppy Joes is how simple the ingredients are: you brown the meat, simmer it with a flavorful sauce, pile it onto buns and serve.

This classic, no-fuss recipe is a staple every home cook should know.

Serve Sloppy Joes with creamy coleslaw, potato chips, crispy fries, Southern baked beans or tater tots for a satisfying meal.

Ingredients for Sloppy Joe

  • Ground beef, onion (yellow or white), green bell pepper, tomato sauce, brown sugar (light or dark), dried mustard, Worcestershire sauce, garlic powder, paprika (optional) and a bit of oil for browning the meat.
  • Buns: hamburger buns, brioche, soft rolls or serve open-face on toast.

How to make it

  • Heat a little oil in a large skillet over medium heat and brown the ground beef until no longer pink.
  • Drain excess fat, return the meat to the skillet, then add chopped onion and green bell pepper and cook until tender.
  • Stir in tomato sauce, Worcestershire, brown sugar, mustard, garlic powder and paprika. Simmer on low, uncovered, until the sauce thickens.
  • Adjust salt and pepper to taste.
  • Pile the meat sauce onto toasted buns and serve—cheese is optional.

Recipe FAQ

How much meat per bun?

About 4 ounces, roughly 1/2 cup of the meat mixture, is a good serving size. Expect the sandwich to be a little messy—that’s part of the appeal.

Can I substitute ground turkey for ground beef?

Yes. Ground turkey is a leaner option; if you use it you may want to add a bit more tomato sauce or a splash of broth so the sandwich stays nice and sloppy.

These Sloppy Joes are typically served on hamburger or brioche buns, but soft rolls or hoagie-style rolls work well too.

Storage and reheating

Reheat the Sloppy Joe mixture on the stovetop over low heat for best texture. If using a microwave, cover the container to prevent splatters and heat in short intervals, stirring between each.

The sauce can thicken after refrigeration or freezing; thin it with a splash of water or tomato sauce while reheating if needed.

Ingredients

  • 2 lbs. ground beef cooked and drained
  • ½ cup chopped onion
  • ¼ cup chopped green bell pepper
  • 2 tablespoons oil
  • 3 tablespoons Worcestershire sauce
  • 16 ounces tomato sauce
  • 2 teaspoons ground mustard
  • ½ teaspoon garlic powder
  • 2 teaspoons paprika (optional) smoky, not sweet
  • ½ cup brown sugar
  • salt and pepper to taste
  • 8 burger buns
  • tablespoon butter for buns
  • 4 oz. cheese optional

Instructions

Meat Sauce

  • In a large skillet over medium heat, warm the oil and brown the ground beef until it is no longer pink. Drain well, return the meat to the skillet, add chopped onion and bell pepper and cook until tender, about 10 minutes.
  • Stir in Worcestershire sauce, tomato sauce, ground mustard, paprika (if using) and brown sugar. Combine thoroughly.
  • Reduce the heat to medium-low and simmer for about 15 minutes, or until the sauce thickens to your liking.
  • Season with salt and pepper to taste. Once the buns are toasted, spoon the meat mixture onto them and top with cheese if desired.

Bread Instructions

  • Preheat the oven to 500°F or set to broil.
  • Lightly butter the cut sides of the buns, place them cut-side up on a baking sheet and broil for 3–5 minutes until lightly toasted.
  • Remove buns from the oven and set aside until ready to assemble.

Notes

  • After browning ground beef, drain it well in a colander; do not rinse. This keeps the flavor concentrated in the meat mixture.
