  • 1 (9 x 13) pan of red velvet cake, baked and cooled
  • 1 can prepared cream cheese frosting
  • 1 lb (about 2 cups) candy coating or melts (white, dark, or both)
  • Home-made red chocolate hearts: about 1/2 cup red candy wafers

Instructions

Red Velvet Truffle Filling

  • Crumble the cooled red velvet cake into a large bowl. Add the cream cheese frosting and mix with your fingers until evenly combined and moist, forming a dough-like mixture.
  • Portion the mixture into small balls using a small cookie scoop or your hands, and roll between your palms until smooth and round.
  • Place the cake balls on a baking sheet lined with foil or parchment.
  • Freeze the balls for at least 30 minutes to firm them before coating.

Red Heart Decoratives

  • Melt red candy wafers in a microwave-safe bowl until smooth. Transfer the melted candy to a zip-top bag, snip a tiny corner, and pipe small hearts onto parchment. Allow them to set completely, then reserve for topping the truffles.

Truffle Coating

  • Melt the candy coating in a microwave-safe bowl, stirring frequently to avoid burning. If the coating is too thick, add a small amount of butter or shortening to thin it to a pourable consistency.
  • To coat, place a chilled cake ball on a fork and spoon the melted coating over it, tapping the fork on the bowl edge to remove excess. Alternatively, dip the ball directly into the coating with a dipping tool.
  • Place each dipped truffle on the prepared baking sheet. Repeat for the remaining balls.
  • Refrigerate the truffles until the coating is fully set, about 20 minutes.
