Ingredients

  • 1 ¾ cups crushed pretzels*
  • ½ cup oat flour**
  • ¾ cup creamy peanut butter
  • ⅓ cup honey
  • 2 teaspoons vanilla extract
  • 2 ounces dark chocolate (I use 70%), chopped***

Instructions

  1. Add the crushed pretzels, oat flour, peanut butter, honey, and vanilla extract to a large bowl. Stir until the oat flour is absorbed and the mixture comes together.
  2. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  3. Line a baking sheet with parchment paper. Using a small scoop or your hands, roll the chilled mixture into 1-inch balls and place them on the prepared sheet.
  4. Place the chopped chocolate in a microwave-safe bowl and heat in 30-second intervals, stirring between each, until smooth. Alternatively, melt the chocolate over a double boiler. Drizzle the melted chocolate over the balls.
