Fresh Berry Green Salad with Pomegranate Meyer Lemon Salad Dressing
Last week I brought this Fresh Berry Green Salad with Pomegranate Meyer Lemon Salad Dressing to a ladies’ church luncheon. The event, held every year just before Christmas, is always a warm, festive time to reconnect with friends. I like to contribute a salad that looks celebratory and tastes fresh, reflecting the joy of the season.
I recently bought a box of Meyer lemons at Costco and wanted to use them in several dishes. Meyer lemons have a fragrant aroma, bright yellow skin, and a sweeter, less tart juice than regular lemons. Their thin rind is also edible, which makes them great for both juice and slices in salads.
With a fruity green salad in mind, I created a pomegranate-based dressing brightened with Meyer lemon juice. A little honey (or maple syrup for a vegan option) balances the acidity, producing a dressing that is vibrant, juicy, and light. I also added thin slices of Meyer lemon to the salad for color and a sprinkle of toasted sliced almonds for a pleasant crunch.
The salad was well received at the luncheon. A few guests were avoiding dairy, so this antioxidant-rich, dairy-free salad was a welcome option. With generous amounts of blueberries, raspberries, pomegranate seeds, and toasted almonds atop mixed baby greens, the salad looked festive and satisfying without being heavy.

Pomegranate Meyer Lemon Salad Dressing

Whisk together the pomegranate juice, Meyer lemon juice (seeds removed), honey or maple syrup, light olive oil, and salt and pepper to taste until well combined.

Toss the mixed baby greens with pomegranate seeds, blueberries, raspberries, toasted sliced almonds, and the thinly sliced Meyer lemon pieces.
