Mom’s Classic Russian Tea Recipe

Ingredients

3 lemons
3 oranges
2 tablespoons whole cloves
2 quarts brewed tea (about 2 family-size tea bags or equivalent)
1 1/2 cups sugar
1 pint pineapple juice

Method

Place the cloves in a pot of boiling water and simmer for a few minutes to release their flavor. Remove from heat and steep the tea bags in the hot spiced water until strong, about 5–10 minutes, then remove the tea bags and any whole cloves.

While the tea is still warm (but not boiling), stir in the sugar until fully dissolved. Add the pineapple juice and stir to combine.

Juice the lemons and oranges and strain the juice if desired to remove pulp and seeds. Add the citrus juices to the tea mixture and stir well. Chill thoroughly before serving over ice.

Adjust sweetness to taste by adding more or less sugar, and garnish with citrus slices if you like. This spiced citrus pineapple tea is refreshing served cold and makes a great pitcher for gatherings.
