A couple of years ago I attended a panel featuring several well-known chefs debating Molecular Gastronomy versus Slow Food. Much of it was fascinating, but the line I remember most was when Thomas Keller declared that good food can’t be made in 30 minutes or less. I couldn’t help but think: that’s easy to say when you have a hundred people in the kitchen.
I’d love to see Keller lace up my size-8 Bean Boots and try to whip up dinner for two small, impatient kids on a weeknight. Maybe he could do it—after all, he’s a culinary genius—but my bet is the kids would raid the snack drawer and be tucked into bed with crumbs on their faces before a complex meal was ready.
Most of us don’t have a brigade of cooks or hours to spend on dinner. That’s why I’m committed to helping you get something tasty—and yes, often healthy—on the table in under an hour.
