Pina Colada Overnight Oats Recipe for Tropical Breakfast

Piña coladas are one of my favorite frozen drinks. The blend of creamy coconut, bright pineapple, and a touch of rum captures summer in a glass. While I enjoy an occasional cocktail, I don’t make them often—my husband isn’t a fan and they can be indulgent. These piña colada overnight oats let you enjoy the classic flavors in a lighter, breakfast-friendly form.

They’re simple to prepare: about five minutes of hands-on time the night before, then refrigerate. By morning you’ll have a chilled, creamy oat bowl ready to enjoy.

Recipe Tips and Suggestions:

  • These are overnight oats, so the oats need time to absorb the liquid and soften. Four hours can be enough, but preparing them the night before is easiest.
  • For the fullest piña colada flavor, use both coconut yogurt and coconut milk. You can choose unsweetened coconut milk yogurt or a coconut-flavored yogurt depending on your taste and dietary needs.
  • To make toasted coconut: add 1/2 cup sweetened coconut to a dry skillet over medium-high heat and stir until golden, about 5 minutes. Cool and store in an airtight container.
  • You can make a larger batch and keep it refrigerated for 3–4 days for easy breakfasts all week.

Overnight oats made with coconut milk, coconut yogurt, and crushed pineapple — a creamy, easy breakfast with minimal prep.

Ingredients

  • 1/4 cup coconut yogurt
  • 2/3 cup coconut milk
  • 1/4 cup crushed pineapple
  • pinch salt
  • 2 teaspoons maple syrup (or to taste)
  • 1/3 cup old fashioned oats
  • toasted coconut flakes, for topping

Instructions

  1. In a small bowl, stir together the coconut yogurt, coconut milk, crushed pineapple, pinch of salt, and maple syrup until combined. Stir in the oats.
  2. Cover and chill for at least 4 hours or overnight. In the morning, top with toasted coconut, banana slices, or extra pineapple and enjoy.

Notes

You can use any coconut yogurt you prefer, including coconut milk yogurt or coconut-flavored Greek-style yogurt.
