  • 2 lbs bone-in, skin-on chicken thighs
  • 2 tsp garlic powder

For the Rice:

  • 2 Tbsp butter or ghee
  • 1/2 yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups white rice
  • 1 Tbsp chili powder
  • 2 tsp dried oregano
  • 3 cups chicken broth (or water)
  • 2 Tbsp tomato paste
  • 3 Tbsp salsa (optional)

Instructions

  • Pour the dry rice into a bowl and cover with 2 inches of water. Soak at least 15 minutes, then drain and set aside.
