  • 1 roma tomato diced
  • 1/2 white onion diced
  • 1 garlic clove
  • 1 jalapeno seeded
  • 2/3 cup cilantro
  • 1 lime zested and juiced
  • 1 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Instructions: 

  • Add the canned diced tomatoes, diced roma tomato, diced white onion, garlic clove, seeded jalapeño, cilantro, lime zest and juice, olive oil, kosher salt, black pepper, and garlic powder to the bowl of a food processor or blender.
  • Pulse the blender or food processor until the mixture is chunky and well combined. Avoid over-blending—you want texture, not a puree.
