
Sometimes a recipe idea just strikes, and that’s how this Knorr Spinach Dip Smothered Chicken came to be. I was planning a party menu and considered bringing a classic Knorr spinach dip. Then I wondered how that familiar dip would taste baked onto chicken and finished with melty mozzarella. I tested it—and it’s fantastic.
What will you need to make this Knorr Spinach Dip Smothered Chicken?

The ingredient list is simple and easy to assemble. You’ll need:
- One packet Knorr Vegetable Recipe Mix
- 1 cup mayonnaise
- 1 cup sour cream
- 8 oz can water chestnuts, finely chopped (optional)
- 10 oz frozen chopped spinach, thawed and drained
- 4 large chicken breasts (about 8–9 oz each)
- 8 oz fresh mozzarella, grated

Begin by slicing each chicken breast lengthwise to create thinner cutlets. You can also use smaller breasts, chicken tenders, or boneless thighs if you prefer. Pat the chicken dry and season both sides with salt and pepper.
Optional step: heat about 1 tablespoon of oil over medium heat and brown the chicken for 2–3 minutes per side. This adds flavor and color, but it’s not required since the chicken will finish cooking in the oven. Remove the browned pieces and set aside.
Is this step necessary?
No—it’s optional. Browning gives more flavor and a nicer appearance, but you can skip it and still get great results.



For the filling, combine the mayonnaise, sour cream, chopped water chestnuts (if using), thawed and drained spinach, and the Knorr vegetable seasoning packet. I like to add a pinch of red pepper flakes for a little heat, but that’s optional.
Mix until the filling is smooth and creamy. If you’re tempted to sample—go ahead, but save enough for spreading on the chicken!


Grate about 8 ounces of fresh mozzarella.
Can you buy the pre-shredded stuff?
Yes—pre-shredded mozzarella works fine. I prefer shredding my own because it melts more smoothly and tastes fresher, but convenience is perfectly acceptable here.
Assemble the dish by laying the seasoned chicken in a baking dish, spooning the spinach mixture over each piece, then sprinkling evenly with the grated mozzarella. Bake in a 400°F oven for about 20 minutes, until the cheese is melted and the chicken reaches an internal temperature of 165°F.



Tip:
Use a meat thermometer to ensure the chicken reaches 165°F for safe, juicy results. Avoid cooking past 170°F, which can dry the meat.

This dish turned out to be a real crowd-pleaser. I served it with baked sweet potatoes and garlic bread, but it also pairs nicely with rice or a green salad. The creamy spinach and melted mozzarella complement the chicken perfectly.
