Ingredients

Servings: 4
  • 6 cups baby arugula
  • 4 medium carrotsdiced
  • cup crumbled feta cheese
  • ½ cup fresh basilchopped
  • 2 medium beetspeeled and diced
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C). Spray a baking sheet with nonfat cooking spray or lightly oil it. Spread the diced carrots and beets on the sheet, mist lightly with olive oil or spray, season with salt and pepper, and roast until tender, about 40 minutes.
  • While the vegetables roast, whisk together the olive oil, honey, lemon juice, and a pinch of salt and pepper in a small bowl.
  • In a large bowl, combine the arugula and chopped basil. Toss with the dressing until evenly coated.
  • Top the dressed greens with the warm roasted carrots and beets, sprinkle with crumbled feta, adjust seasoning if needed, and serve immediately.
