Single-Serve College Pasta Bowl Recipe for One

Cooking for one is a skill I learned in college. Back in high school, I loved cooking for my family of five: a large kitchen, plenty of ingredients and spices, help with cleanup, and more free time made it easy to prepare multi-dish meals. Ingredients

  • 2 ounces whole-grain pasta
  • A large handful of washed spinach
  • 1/2 cup sautéed or roasted vegetables, chopped
  • 1/4 cup cottage cheese or ricotta
  • 2 tablespoons mozzarella cheese, divided
  • 3/4 cup marinara sauce

Method

  1. Cook the pasta according to package directions. If you like, add a handful of chopped broccoli to the pot during the last 3 minutes of cooking for extra veggies.
  2. Place the washed spinach in a colander and drain the pasta directly over it. The hot pasta water will quickly wilt the spinach so you don’t need to cook it separately. Transfer the wilted spinach and pasta to a microwave-safe bowl.
  3. Add the chopped sautéed or roasted vegetables, a scoop of cottage or ricotta cheese, and about 1 tablespoon of mozzarella cheese. Spoon the marinara sauce over the top and finish with the remaining mozzarella.
  4. Microwave the bowl for 60–90 seconds, or until the cheese on top is melted and everything is heated through. Enjoy immediately.

The beauty of this pasta bowl is its versatility. Use any whole-grain or legume-based pasta you prefer, swap cottage cheese for ricotta if you like a creamier texture, or add cooked chicken, canned tuna, or beans for extra protein. Frozen sautéed vegetables work well too—when I make extras for omelets, I freeze them in portions and toss them into meals like this later.

Tips and Notes

  • These quantities make one serving, but the recipe scales easily—double it to have a second portion for another day.
  • Choose a marinara you enjoy; a flavorful sauce makes this dish taste richer with minimal effort.
  • If you don’t have a microwave, finish the assembled bowl in a preheated oven-safe dish at 350°F (175°C) for 8–10 minutes until the cheese melts.
