White Chocolate Confetti Brownies

Ingredients

  • 7 tablespoons butter, very soft
  • 11 oz white chocolate
  • 3/4 cups granulated sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/3 cup rainbow sprinkles

Instructions

  • Preheat the oven to 350°F and line a 9×13-inch pan with parchment paper.
  • Combine the butter and white chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until fully melted and smooth.
  • Stir in the granulated sugar until combined. Add the eggs one at a time, then mix in the vanilla. Fold in the flour, salt, and most of the sprinkles, reserving a little for the top.
  • Spread the batter evenly in the prepared pan, sprinkle the reserved sprinkles over the top, and bake for about 30 minutes.
  • Tip: If the edges are browning too quickly, loosely cover the pan with foil after about 15 minutes of baking. Test doneness by inserting a toothpick into the center—if it comes out clean, the brownies are done; if not, bake a few minutes longer.
  • Remove from the oven and let the brownies cool completely before cutting. Serve and enjoy.
